Ingredients:
1 lb cucumbers, peeled and chopped 1 garlic clove, smashed
1⁄2 c water
1 c arugula
2 TBS mint
2 TBS parsley
2TBS cilantro
2 TBS basil
1 1⁄2 TBS red wine vinegar 1 Tbs lemon juice
salt
1⁄4 c olive oil
1 c mashed avocado
Directions:
Put everything in a blender and blend until smooth.
Eat chilled with toasted pepitas and paprika as a garnish.
