Located in Richmond, Va, VegTable is a vegetable-forward concept by Chef Kathryn Schmitz, working with local ingredients to make unique products highlighting what's in season. Offerings include seasonal jams, sauces, dips, & spreads, as well as bake-at-home gougères. Much of the thought behind the products is focused on entertaining -- whether you're building a spread for a large gathering, or just want to indulge with a few on a quiet night in. Seasonality, sustainability, and local sourcing are central to VegTable's practices, with many ingredients coming from fellow Birdhouse vendors. Full-utilization of produce is an important component in product development, and anything that cannot be used is composted with Compost RVA. Some products you have to give a try include VegTable’s Beet ‘Nduja Spread, Bake-At-Home Gougères, and their seasonal Jam, Berbere - Spiced Tomato Jam.
